Due to the current available Geo characters, the "Mono Geo" terminology is discredited when using a character with a different element. However, the attack rotation and effectiveness of the team stays the same.
Three Geo Characters For Optimized Gorou
To fully optimize Gorou's buff from Burst, you must include at least 3 Geo characters in a team. Since Itto & Gorou are both Geo, you can go for 2 Geo characters or 1 Geo character and 1 non-Geo character.
ATK Can Still Be Used By Itto
It is true that Itto's damage scales mainly from DEF. However, ATK can also improve Itto's damage output so you can still use supports like Bennett in a team with Itto.
Geo Construct Is Capped At 3
The number of Geo constructs that can simultaneously exist is up to 3. When another Geo construct is produced beyond the cap, the initially created Geo construct gets destroyed.

With the elements that can react with Geo, the bonus effect of Geo resonance can be enabled by producing and acquiring the shield shards produced by Crystallize.
Workaround For Geo Immunity
Shatter deals subtle Physical DMG. Together with Itto's Normal and Charged ATK without the infusion from his Burst, this is a viable combat method when facing an enemy that is immune to Geo DMG.
