DPS generally means Damage Per Second
In most of the games, DPS is used as an acronym for "Damage Per Second". In the context of Genshin Impact, DPS refers to characters that uses their abilities to deal damage to enemies.
Some Are On-Field while Some are Off-Field
DPS Characters in Genshin Impact is separated into two categories, On-Field & Off-Field DPS.
On-Field DPS are Damage Dealers that Stays In the Field
On-Field DPS are often referred to as Main DPS or Attackers. These type of DPS needs to be on-field to be able to deal damage and is normally supported by other party members while doing so. A notable example of an On-Field DPS is Neuvillette.
Off-Field DPS are Damage Dealers that is not actively on the Field

Off-Field DPS, often referred to as "Sub-DPS" are characters that deals damage from behind. They are usually played by activating their off-field Skill (which is usually from Elemental Skill or Burst) the switching to another character. A notable example of this type of DPS is Xiangling.
