Each version of Monster Hunter Wilds have different prices and inclusions. The Deluxe and Premium Deluxe Editions have a higher price, but includes exclusive in-game items, such as layered armor!

Standard Edition if You are Not Interested In Cosmetics
Neither the Deluxe nor the Premium Deluxe editions offer anything that will give you in-game benefits because their inclusions are all cosmetics. If you have no particular preference to these, it's recommended to just get the Standard edition.
If You Want to Enjoy the Game to the Fullest, Go for the Premium Edition
The Deluxe Edition's inclusions will be available for purchase as DLC at a later date. On the other hand, the Premium Deluxe Edition will not become available for purchase later on, so if you are a collector, it's the better option.
No International Collector's Editions Yet
There is a Japan-exclusive Collector's Edition but no news on an international Collector's Editions yet.
