You can obtain a total of 3 Lumenstone Ores all throughout the Chasm: Underground Mine. In order to progress deeper, you are required to finish Chasm world quests.

You can get a Lumenstone Ore by finishing Chasm Spelunkers. Once you are done with it, look for Zhiqiong at the first campsite.

During The Heavenly Stone's Debris, you need to activate the mechanisms at the Stone Halls. Once done, you can obtain a Lumenstone Ore near the hole where you can descend lower into the Chasm.

As you progress with Perils in the Dark, there is a Fatui camp at the left side of the narrow tunnel. You can obtain a Lumenstone Ore beside the Fatui Action Log IV.
How To Use Lumenstone Ore
Upgrading Lumenstone Adjuvant
Jinwu lets you upgrade your Lumenstone Adjuvant. You are required to use Lumenstone Ore, together with a couple of Lumenspar, for upgrading Lumenstone Adjuvant at certain ranks.

Since the Lumenstone Ore was introduced in the Liyue Diaries: The Chasm, this item will be available from version 2.6
