Working On Different Routes At The Same Is Recommended
In Pokemon Scarlet and Violet, there are 3 story routes. You can start at any route, but instead of working on 1 route, it is recommended to work in the same level routes at the same time. In the end you would need to complete all the routes, so it will be easier if you work on them together.

When You Finish All Routes, You Can Battle The Final Boss

After you complete all routes: Victory Road/Path of Legends/Starfall Street you can challenge the Final Boss of this game. Once you finish the Final Boss, then it will finally be the Ending and you will unlock Post Game features.
▶Post Game GuideWhat Is Victory Road?
Collect Badges And Challenge The Champion

Victory Road is when you defeat all the Gym Leaders in each of their towns. You will collect Badges to challenge the Elite Four and Champion. It is the same route like the past Pokemon Games, but you can challenge any Gym at any time which is the new feature of Open World.
▶See all Pokemon Parties for Gym LeadersBattle The Leaders After The Gym Test

To challenge each of the Gym Leader, you must pass each Gym Test that is given to you when you enter the Gym. There are some that you will just battle Trainers as well as participating in Mini Games and solving Puzzles.
High Level Pokemon Will Listen To Your Commands

The advantage of completing the Victory Road, is so when you capture High Level Pokemon (or exchange Pokemons) they will listen to your commands. Do not worry Pokemon that you have caught at a low level and has been raising them, they will listen to you.
