The most noticable change you'll see when the season changes is the color of the trees and grass. They'll shift from flowering, to green, then brown, and white, depending on the hemisphere you've chosen.

Changes Day-To-Day Outlook
Animal Crossing: New Horizons simply changes the way your island looks on a daily basis. When it's sunny, everything will be bright, while it can be gloomy when it's raining or snowing.
No Need To Water Flower When Raining
In previous games, you don't need to water your flower when the weather is rainy. Whether this is applicable in New Horizons has yet to be confirmed.
Affects Appearance Of Bugs & Fish
The weather can also affect the appearance of bugs and fish. Some bugs and fish appear only during certain weather so it's best to keep catching them no matter the forecast!
Time Of Day Changes
Opening & Closing Of Shops
The most important difference you'll see in time of day is the opening and closing times of shops. In New Leaf, most shops open at around 9AM then close at around 8-10PM.
Special Island Visitors
Some island visitors can only be encountered during a certain time of day. For example, Wisp, a returning special character from the older games, can be encountered during the wee hours of the morning!
Bug & Fish Spawn Times
Time of day also affects the type of bugs and fish you can catch on your island. Some bugs and fish will only show up at night or during a certain period of the day.
