Damage Type Dealt By Swords
Cutting (sever) damage is dealt by swords in Monster Hunter World, which is most of the weapons in the game. When you attack with these weapons, you deal cutting or severing type of damage.
Most Effective In Cutting Tails
Weapons with cutting damage are most effective when you want to cut off a monster's tail. Some monsters have "breakable" tails that need blunt weapon damage but most monster tails in MHW can be cut off with severing damage.

Even when you equip ranged weapons such as bowguns, you can still deal cutting (sever) damage by equipping certain types of ammo. If you aim properly at monster tails, you can still cut them off even with ranged weapons.

If you use blunt damage weapons, aim at the head of the monster to accumulate the chance to stun the monster. When successful, the monster will be knocked down and open for free hits.
