Leviathan The Lost Does Not Appear In The Story
In the story of FF16, Leviathan did not make an appearance. However, hints of Leviathan's existence were suggested through character dialogue and world building.

In the special art box of the collector's edition, an Eikon that appears to be Leviathan is shown in the lower left corner. Many people expected that Leviathan would appear.

When you examine the books in The Hideaway in the game, you can find descriptions mentioning sea creatures dwelling in the open seas. Although it's not explicitly mentioned as Leviathan, it could be an implied reference.
