Collector Leviathan

The Collector Leviathan will likely be the first Leviathan you encounter if you follow the natural progression of the game. It patrols the open water east of the Lifepod on the way to the Alien Ruins.
Highly Aggressive Leviathan
Even if you are a distance from it, the Collector Leviathan will attack you when it spots you. It will let out a pulse that can stun before going for a grab. It can be outrun with an upgraded Tadpole.
How to Scan Collector Leviathan
The best way to do this is to use your Tadpole as a distraction since it will continue to attack unmanned Tadpoles. After being grabbed, get out of the Tadpole, then stay behind its head area to scan it.

The Shiver Leviathan is a collective pack made up of a large female Shiver and three smaller Male Shivers. It patrols the waters considered beyond the World's boundaries. In other words, it prevents players from going where they shouldn't yet.
Hostile Pack Hunter
Both the female and all of the males will attack you when it could. The three males usually ride along the female's back and wings but will detach from it to chase after you if need be.
How to Scan Shiver Leviathan
The Shiver Leviathan cannot go outside of the restricted area so you can use to your advantage. Use the world's border (orange marker) to trick it. While it's in or near the border, it cannot attack and you will be able to scan it.

Great Jaw

The Great Jaw is a giant Mollusc found southwest of the Lifepod near the Cicada Wreck (Canteen). It's a stationary Leviathan so it's fairly easy to scan.
Enter Its Shell at Your Own Risk
The Great Jaw has its shell open, waiting for any prey to come in. Tripping any of its pink tendrils will trigger the shell close. If you get caught by it, you will be eaten.
How to Scan Great Jaw
Scanning the Great Jaw is fairly easy since it is stationary. It does let out an initial electric shock when you come near it, but you can survive this easily. Scan its shell without going inside it to do this safely.
Deepwing Brooder

The Deepwing Brooder is a docile Leviathan that travel in packs across the waters of the planet. They often swim in higher elevations, with some at above 100m depths.
Docile Pack Leviathans
No matter how close you get, the Deepwing Brooder and its pack will not mind you. They will continue to swim on their path.
How to Scan Deepwing Brooder
Since the Deepwing Brooder is a non-aggressive Leviathan, you can easily swim to it and scan it. Having a Tadpole will make it easier to catch up to it.
World Tree

The giant tree at the edge of the map is a Titan-class Leviathan organism. The Titan Rock Bores scattered across the world are likely its roots. The game also confirms that this is not the only world tree on the planet.
How to Scan
Although you can see the World Tree, there is currently no way to go to its location, more so to scan it. Reaching it requires crossing the Void, which is inhabited by Shiver Leviathans that will attack you on site.
Alpha Variants
Two regular creature species have alpha-class variants. These do not have unique scan icons and appear without any announcement.
Marrow Breach (Alpha)

This variant is roughly 50% larger than normal specimens. Its file-locked PDA log is labeled "Man-Eating Marrow Breach" and contains a detail the standard entry lacks: it has digestive enzymes capable of processing human tissue. The log also flags the specimen's origin as unknown.
Needler Mango (Alpha)

Significantly larger than normal, this alpha occupies the best spot in its territory and has no unique PDA log.
Are Any Leviathans Returning From Previous Games?

No. Since Subnautica 2 takes place on a different planet, it features entirely new fauna. However, there is a memento from the original game in the form of a Reaper Leviathan statue, which is available as a base decoration.
Will More Leviathans Be Added?

Yes. Unknown Worlds has confirmed additional creatures as part of the Early Access roadmap.
