Collected items can be tracked through your Bag. This makes it important to have at least 1 of each item to be able to track and collect them easily.

Using Hendrickson as your active character will cause nearby gathering points to appear automatically on your map. This is due to his Adventure Skill. However, it will not specify what the items will be.

Use the Workbench to Salvage
In order to Salvage items and equipment, you will need to select the "Salvage" option in the Workbench. This can be done in any safe location where you have placed down the Workbench.
How to Craft and Get a WorkbenchMake Use of Category Tabs & Filters
To narrow down the items you want to Salve, it's best to make use of the category tabs and the filter option in the Salvage menu. Be careful in bulk selecting as you may end up salvaging an item you don't intend to.
