There Is No Shiny When Choosing Your Starter Pokemon
In the scene of choosing your starter Pokemon, shiny Pokemon doesn't appear. You can only choose which nature satisfies you.
Turn Auto-Save OFF
If Auto-Save is ON, you may not be able to return to the point where you can select from the starter Pokemon because of auto-save. Before choosing from the starter Pokemon, turn Auto-Save OFF from the options and then save.
Return To The Home Screen And Restart The Game
If you are not satisfied with the start Pokemon you have obtained, you can return to the data just before selecting by exiting the game on the home screen. Don't forget to save manually once after turning off Auto-Save.
