Quietly Approach From Behind And Mount The Horse To Avoid Detection
Since Horses are sensitive creatures, they will run away from you even from behind and if you walk up to it in a normal manner. You can make it harder for them to notice you by walking in a crouching position. So first walk behind the Horse and then approach it in a crouching position.
Stealth Gear And Sneaky Foods Are Also Effective
Improving your stealth can be helpful for riding horses undetected. Using stealth gear and eating sneaky foods can help increase your stealth level. However, the effectiveness of these methods also depends on the surrounding environment. With a full set of stealth gear, you can even approach and mount a horse while walking without being noticed by enemies.
Easy To Ride From Above With Paraglider
It's possible to ride a horse without wearing stealth gear by using a paraglider to approach and mount the horse directly from above. However, even when using a paraglider to approach a horse from above, it's still important to be cautious. To avoid being detected, it's best to approach the horse from behind or by the side rather than directly approaching from the front.

A horse with a spirited temperament needs to be calmed down as soon as you ride it, because it may start to act up. If it can't be calmed down, you may be thrown off, so start hitting the L button as soon as you get on.
Energizing Elixir And Stamina Foods Are Available
If you find yourself running low on Stamina during intense battles or exploration, you can quickly replenish your gauge by consuming Stamina Foods or using Energizing Elixir. Even if your Stamina Wheel is low, consuming dishes that give you energy can help restore your gauge even when you're calming down during gameplay. Additionally, it's recommended to eat Stamina foods beforehand to increase your Stamina Wheel.
What To Do After You Catch A Horse
Register At The Horse Stable First
After catching a horse, the first thing to do is to take it to a Stable and register it. If you leave it unregistered, there's a risk it may disappear when you lose track of it, so take note of this.
You Can Call Your Horse At Any Time Once Registered
Registering a horse at a Stable costs 20 Rupees, but once registered, you can call your horse from any Stable at any time. The best part is, all Stables are connected, meaning that you can get your Horse at any Stable without needing to go all the way back to where you registered it or to look for it yourself.
Up To 5 Horses Can Be Registered
The Horse Stable owner will allow you to register up to five Horses maximum. Should you attempt to register any more, you must replace it with one of your trusted steeds. Keep this in mind, lest you find yourself unable to register your new Horse!

The bond between you and a newly caught Horse starts at 0, and it may veer off the path while running. However, you can tame it by using the L button to calm it down when it strays or slow it down after a dash. Feeding it also helps to improves your bond with it as well as repeatedly calming it down will quickly raise its bond level to the maximum.
Equipment Can Be Changed When Maxed Out
Once your bond with your Horse reaches its maximum, you'll be able to change your horse's equipment and saddle in the Horse Stables. It won't cost you a single Rupee, so you can freely make changes as often as you like! Do keep in mind however that Epona and Giant Horses are exceptions which you cannot have their gear altered.
