How To Unlock The 4th Survivor (Hunk)
Unlock After Clearing The Game
In order for you to unlock the 4th Survivor Extra Mode in Resident Evil 2, you will need to clear an A and B scenario once.

Since the game has four scenarios (Leon A/B, Claire A/B), you will only have to play up until you complete your first 2nd Run. That means that you will have to clear the game by using Leon and Claire at least once.
You Can Complete The Game On Any Difficulty
There is no restriction regarding which difficulty of the game you need to clear. You will be able to unlock Hunk's Survivor Mode by completing both of your runs on either Assisted, Standard, or Hardcore difficulties.
Escape From The Sewers Using Hunk!
Hunk, or the Grim Reaper is a USS Special Agent and the leader of the Alpha Team. He is the lone survivor in his team and has to fight his way out of the Sewers, and get to the extraction point at the front gate of the Police Station.

Unlocked After Clearing The 4th Survivor Mode
You will be able to play as the Tofu survivor after clearing the 4th Survivor mode. This means that before you can play as Tofu, you will need to finish at Leon's, Claire's and Hunk's run at least once.
Similar Scenario To Hunk
Generally the Tofu Survivor has the same objective as Hunk. What differentiates their scenario is that the Tofu is only armed with several Combat Knives, and less Herbs to use!
